Behr focuses on aroma, appearance, flavor, and texture to determine what 'the best' means for each of the fifty foods, including a guide to selecting top quality - signs of freshness and ripeness, best season, top varieties, proper aging. Each entry includes tips on how best to prepare, serve, or eat each food (how to open an oyster, why the best way to cook green beans is boiling, how to clean a whole salted anchovy, when to eat and when to discard the rind of a cheese). Behr also names the most complementary foods and wines for each of these marvelous foods. Most of the fifty foods are raw materials, but some have been fermented or otherwise transformed - into bread, ham, cheese. Six of the fifty are cheeses. As Behr explains, cheese is probably the best food, as wine is the best drink. He argues that food tastes more delicious when it is closer to nature. Skilled low technology - more traditional methods - is almost always superior to high technology. But with scientific insight, the old methods can be refined to achieve more consistent high quality. We can't always have the best, but with the information in this book we can eat better every day. Old Mother West Wind - 169 pp, no date but c1943 - "Old Mother West Wind lived in the Purple Hills. Each day she came down with her children, the Merry Little Breezes, who played in the Meadows all day long. These are the stories of their friends on the Meadow. We learn how the Breezes, always anxious to do a good deed, saved Mrs. Redwing's speckled egg and how they always helped Johnny Chuck escape Farmer Brown and his gun. We hear about Peter Rabbit's joke and Billy Mink's swimming party and Little Joe Otter's slippery slide. We learn, too, why Grandfather Frog has no tail and why Jimmy Skunk wears stripes." 16 stories in total. 2. Mary Frances's mother is ill and for three weeks, she must take over kitchen duties. The little girl is helped and instructed by the Kitchen People (animated utensils) - the Tea Kettle, Big Iron Pot, Coffee Pot, Auntie Rolling Pin, Toaster Man, Potato Masher, Frying Pan, et al, as she progresses through increasingly difficult recipes. Beginning with plain toast, buttered toast and milk toast, she continues on through baked apples, thimble biscuit, gingerbread cookies and rice, on to boiled mutton, walnut kisses, sponge cake, Queen of Hearts tarts, salad dressing and beefsteak, among others. Its extensive analysis offers, on the one hand, an unusual landmark in population biology and, on the other, perhaps the requiem of a species. Once the prized favorite of medieval falconers, the cosmopolitan peregrine falcon was, until quite recently, a remarkably successful example of avian evolution. By the early 1960's, however, peregrine populations were catastrophically declining on two continents. Other raptors were mysteriously and rapidly decreasing too. In an effort to establish the cause or causes of these unprecedented events, an international conference of scientists, naturalists, and conservationists was convened at the University of Wisconsin in 1965. (This book) summarizes the proceedings of this conference and the enormous pool of unpublished population data that these investigators brought together. (It) examines a wide variety of adverse factors - diseases, parasites, and human harassment - and reaches the conclusion that the concentration of chlorinated hydrocarbons by bird- and fish-eating raptors is the only hypothesis that can adequately explain the simultaneous populations failures of so many species on both sides of the Atlantic Ocean. A concluding chapter in the book briefly describes the research gaps that ecologists promptly closed after the conclusion of the conference: insecticides were found in high levels in surviving peregrines in Alaska and the Canadian Arctic. A dramatic change in eggshell thickness was found to have overtaken various species of raptors in Britain, California, and Massachusetts in 1947. And chlorinated hydrocarbon residue levels in eggs were shown to be inversely correlated with eggshell thickness. The increasing production of persisting insecticides now appers to be a threat to the world's biota on a much wider scale than the one described in this book. The arguments and the data here presented will be of great interest to scientists, conservationists, naturalists, and laymen concerned with the pollution of our environment and with the subtle delayed effects that modern chemicals have on our wildlife resources."
